    Asparagus and Green Beans with Tarragon Lemon Dip

    List of Ingredients

    1 lb fresh Asparagus, trimmed
    1 lb fresh green beans trimmed

    Tarragon Lemon Dip
    1 cup vegan mayonnase
    zest and juice of 1 lemon
    1 small shallot finely chopped
    2 tbsp chopped fresh taragon (4 springs)
    2 tbsp chopped fresh flat leaf parsely
    a few grinds of fresh black pepper

    springs of tarragon and parsley for garnish

    Recipe

    In a large skillet cook asparagus spears and green beans in 1 inch of salted boiling water, covered, 3 or 4 minutes. Drain and cool the vegetables and arrange them on a serving plate. Combine dip ingredients ina small bowl and garnish with sprigs of parley and tarragon and set alongside vegetables on
    serving dish.
