    Asparagus with Black Bean Sauce

    List of Ingredients

    1 tbsp extra light olive oil
    1/2 small onion, peeled and cut into thin wedges
    1 (15-oz.) can whole baby corn, drained*
    1 lb. asparagus, ends trimmed and cut into 1-inch pieces
    1 small red bell pepper, seeded and cut into julienne strips
    1 tbsp. grated fresh ginger
    1/4 cup [vegan] chicken [or vegetable] broth
    3 tbsp. black been sauce*
    3 tbsp. mirin (sweet wine)*

    Recipe

    Heat oil in a large wok or skillet over high heat. Add onion and stir-fry for 3 to 4 minutes. Add remaining vegetables and ginger and stir fry for 3 to 4 minutes more or until vegetables are tender. Stir together broth, black bean sauce and mirin; add to skillet and cook for 1 minute more to heat. Serve over white rice ...
