    A subtle stuffing for a delicate side dish. Serves 4.

    List of Ingredients

    4 kohlrabi bulbs
    3 Tbsp. [vegan] butter
    1/2 cup chopped shallots
    Salt
    Freshly ground black pepper
    1 Tbsp. chopped fresh parsley

    Recipe

    Trim and peel the kohlrabi bulbs. Bring a saucepan of salted water to the boil and simmer the kohlrabi until tender when pierced with a knife, about half an hour.

    Preheat the oven to 185 degrees, and [vegan] butter a baking dish that will hold the kohlrabi snugly.

    Melt the butter in a small skillet and saute the shallots over a very low heat, stirring occasionally, for 10 mins.

    Carefully scoop out the centers of the kohlrabi bulbs, leaving a shell of about 1 cm. thickness. Mash the extracted kohlrabi centers and combine with the sauteed shallots, salt and pepper to taste, and the parsley. Fill the center of each kohlrabi with the mixture, mounding it lightly.

    Arrange the filled kohlrabi in the baking dish, and bake until the tops are golden, about half an hour. Serve warm.
