    2 med Acorn Squash
    1 1/2 t Salt
    2 c Apples, peeled & coarsely chopped (about 2 large)
    Salt
    3 Tbsp vegan margarine; melted
    1 lb Veggieburger Crumbles
    1/2 t Cinnamon
    1/4 c Raisins
    4 Tbsp Brown Sugar; Packed

    Recipe



    Heat the oven to 400 degrees F. Cut each squash in half and
    remove seeds and fibers. Place the squash, cut sides down, in an ungreased baking pan. Add water to a depth of 1/4-inch and bake, uncovered, till squash is tender, about 30 to 40 minutes.

    While squash is baking, cook and stir veggieburger (unless it is pre-browned) in a large skillet with 1 tbsp. butter until it is browned. Remove skillet from heat and stir in salt, cinnamon, apples and raisins.

    Turn squash halves so cut side is up and remove them to a platter. Drain off any remaining liquid in the pan and dry. Scoop out the pulp from the squash, leaving a shell 1/4" thick all the way around. Season the shells with salt to taste.

    Mash pulp and mix in veggieburger mixture. Return to the shells, piling them full, and sprinkle 1 Tbsp of brown sugar on each. Melt remaining butter and drizzle over top. Bake uncovered until apples are tender, about 20 to 30 minutes. Serve hot.
