    2 russet potatoes, peeled
    2 sweet potatoes, peeled
    [vegan egg replacer equal to] extra-large egg
    2 tablespoons extra-virgin olive oil, plus extra for oiling the baking sheet
    1/2 teaspoon chili powder
    Salt and freshly ground black pepper to taste

    Recipe



    Preheat oven to 400°F.

    Slice potatoes in half lengthwise, then slice each half into 4 wedges.

    Combine the [vegan] egg [replacer] with the olive oil and chili powder in a large shallow bowl; whisk to combine. Add the potatoes to the [vegan] egg [replacement] mixture and toss to coat.

    Arrange the potato wedges on a lightly oiled baking sheet so that none of the wedges are touching. Bake for 35 to 45 minutes, turning several times after the first 15 minutes, until fries are golden. Season with salt and pepper and serve immediately.
