Broccoli Timbales

1 large branch broccoli
1 cup raw cashews
3/4 cup water
1 package Mori-Nu tofu
3 Tbsp. McKays chicken style seasoning
1 tsp. onion powder
1/2 tsp. garlic powder
3 Tbsp. cornstarch
2 Tbsp. lemon juice
1 3/4 cup water
2 Tbsp. nutritional food yeastRecipe
Wash broccoli; cut flowerets from stem and break apart. Peel tough skin from stem and slice. Steam until crispy tender, until broccoli is bright green. Set aside.
Blend cashews and 3/4 cup water in blender until satiny smooth, no grainy texture. Add remaining ingredients and blend again until smooth. Add only the stem portion of broccoli and blend until smooth. Pour this mixture into a large measuring cup or bowl, leaving about 2 cups remaining in blender. Add flowerets to blender; pulse the blender a couple of times. Mix both mixtures together and pour into 8 (6 oz.) custard cups. Bake on cookie sheet for 30 minutes at 400 degrees.
