    750 g (1.5 lb) fresh spinach
    1 shallot, minced
    1 clove garlic, minced
    30 ml (2 tbsp) olive oil
    250 ml (1 c) plain soy yogurt
    - salt & pepper to taste -
    15 ml (1 tbsp) fresh mint leaves, minced

    Recipe



    Wash spinach well, trim and chop or tear into pieces. Loosely place spinach into a large saucepan. Add shallot and garlic; cook over medium heat, covered, for about 5 minutes. Shake pan occasionally so that vegetables do not stick.

    Drain vegetables well, add olive oil and continue to cook for 3 minutes, stirring constantly. Remove from heat, stir in soy yogurt and season with salt and pepper.

    Fold in mint (if desired) and serve immediately.
