    Recipe Introduction


    Beans, Beans the Magical Fruit, the more you eat the more you poot! The more you poot, the better you feel, so eat beans for every meal!!! :)


    List of Ingredients


    • 1 pound red kidney beans, dry
    • 1 to 1-1/2 pounds mild or hot smoked sausage or andouille, sliced on the bias
    • Tony Chachere's Cajun Seasoning
    • 1 large onion, chopped
    • Garlic minced 3-4 cloves
    • 4 1/2 cups of water
    • 3 Cups cooked rice


    Instructions


    1. Soak the beans overnight in water, if possible
    2. The next day, drain and put fresh water in the pot. (This helps reduce the, um, flatulence factor.)
    3. Add sausage and all other ingredients(except rice)
    4. Bring the beans to a rolling boil. Make sure the beans are always covered by water, or they will discolor and get hard
    5. Once the beans are boiling, turn heat on low and simmer covered for at LEAST two hours.
    6. Stir occasionally, making sure that it doesn't burn and/or stick to the bottom of the pot.
    7. When stiring, try to mash some of the beans so they will gets nice and creamy.
    8. Serve over Hot rice.


    Final Comments


    Cornbread is a MUST when eating Red Beans and Rice!
