    Alice Plummers Christmas Pudding

    List of Ingredients




    1/2 lb. softened butter
    1/2 lb. brown sugar
    1/4 lb. raisins
    1/4 lb. candied peel
    1/4 lb. sultanas
    1 pkt. glace cherries
    2 1/2 oz. almonds/flakes or slivers
    7 oz. fresh breadcrumbs
    5 oz. plain flour
    1/2 oz. nutmeg
    1 saltspoon all-spice
    1 saltspoon salt
    1 saltspoon cinnamon
    2 saltspoons baking powder
    4 eggs
    2 tsp. brandy
    1 cup milk



    stir brandy into fruit and marinate overnight - cream butter and sugar - beat in eggs - add all other ingredients - stir until well mixed - place in buttered pudding basin - cover with buttered foil - tie cloth over firmly - this mixture makes one large pudding or a medium and a small pudding - boil for 7 hours (or for 4 hours and boil for another 3 hours when needed) - serve with icecream, cream and brandy butter.


    Note: This recipe is over 100 years old - Alice Plummer's granddaughter and I are friends. My mother, Gwladys and my friend's grandmother, Alice, were friends. It is a three generation friendship.
