4 eggs
1 cup castor sugar
1/2 cup lemon juice
1 1/2 tablespoons lemon rind - finely grated
1 cup cream
1 tin John West raspberries
2 tablespoons cherry brandy (optional)
Separate the egg yolks and the whites - beat together egg whites, adding castor sugar slowly until stiff - beat the cream until stiff - beat the lemon juice, grated rind and egg yolks together - fold together and pour into sponge tin - freeze for at least 6 hours - puree tin of raspberries (use as sauce) add cherry brandy (optional) - unmould icecream and cut into wedges like slices of a cake - serve with strawberries or fresh raspberries. Pour over raspberry sauce.
Note: This recipe came from my Welsh cousin, who lives in Northern Victoria and caters parties etc. A retired Home Economy teacher and farmer's wife, she is an expert on easy and elegant meals.
