1 1/2 cup plain flour
2 tablespoons castor sugar
125 gram margarine
1 egg yolk beaten
mix altogether, chill for one hour - press into spring form pie dish - bake blind until cooked
filling
4 eggs
3/4 cup castor sugar
2/3 cup lemon juice
1/2 cup orange juice
1/4 cup cream
60 gram margarine
2 lemon rinds finely grated
beat together - melt margarine and add cream - stir until thickened - DO NOT BOIL - pour into pie crust - bake for 30 minutes at 190°C
Note: This recipe comes from the hairdresser's, when I sat under a hair dryer on the back of a letter from the Department of Aged Care notifying me of another home.
