AL'S FAVOURITE PIZZA NAPLES-STYLE
List of Ingredients
- PIZZA DOUGH
- 1-1/2 CUPS ALL PURPOSE FLOUR - 1/2 TSP. SALT
- 1 PACKAGE ACTIVE DRY YEAST
- 1/2 CUP WARM WATER (105 TO 115F)
- 1 TABLESPOON OLIVE OIL
- TOMATO SAUCE
- 1 TABLESPOON OLIVE OIL
- 1/4 CUP FINELY CHOPPED ONION
- 1 CLOVE GARLIC, MINCED
- 1 (16-0UNCE) CAN ITALIAN-STYLE PLUM TOMATOES, BROKEN UP WITH FORK
- 2 TABLESPOONS TOMATO PASTE
- 1/2 TEASPOON CRUMBLED OREGANO
- 1/2 TEASPOON SUGAR
- 1/2 TEASPOON SALT
- TOPPING
- OLIVE OIL - 8 ANCHOVY FILLETS, HALVED, 1/2 CUP CANNED MUSHROOMS DRAINED
- 1 CUP SHREDDED MOZZARELLA CHEESE - 1/4 CUP GRATED PARMESAN CHEESE
Instructions
- FIRST MAKE CRUST. COMBINE FLOUR AND SALT IN MIXING BOWL. DISSOLVE YEAST IN WARM WATER; ADD OIL; MIX WELL. ADD TO FLOUR MIXTURE. STIR TO FORM STIFF DOUGH. TURN OUT ON LIGHTLY FLOURED SURFACE; KNEAD UNTIL SMOOTH AND ELASTIC. PLACE DOUGH IN GREASED BOWL; ROTATE TO GREASE SURFACE. COVER WITH TOWEL; PLACE IN WARM PLACE TO RISE UNTIL DOUBLE IN BULK (1-1-1/2 HOURS).
- MEANWHILE, MAKE SAUCE. HEAT OIL IN MEDIUM SAUCEPAN. ADD ONION AND GARLIC; SAUTE UNTIL TENDER. ADD REMAINING INGREDIENTS; STIR WELL. SIMMER SAUCE UNTIL THICH, (APPROXIMATELY 50 MINUTES.) REMOVE FROM OVEN. BRUSH WITH OIL; TOP WITH SAUCE.
- WHEN DOUGH HAS DOUBLED IN BULK, PUNCH DOWN. PLACE ON FLOURED SURFACE; ROLL TO 12 INCH CIRCLE OF EVEN THICKNESS. PLACE ON 12-INCH ROUND PIZZA PAN. BAKE IN 400f OVEN 12 TO 14 MINUTES.
- REMOVE FROM OVEN. BRUSH CRUST WITH OIL; TOP WITH SAUCE. ARRANGE ANCHOVY FILLETS AND MUSHROOMS ON TOP. SPRINKLE WITH CHEESE.
- RETURN TO OVEN TO BAKE 10 MINUTES. REMOVED FROM PAN. CUT.
- MAKES 1 (12-INCH) PIZZA
Final Comments
NOTE: IT IS EASY TO HAVE PIZZA READY IN YOUR FREEZER. SIMPLY DOUBLE THE ABOVE RECIPE. MAKE 2 SHELLS. BAKE SECOND SHELL FIRST FOR 13 MINUTES; COOL COMPLETELY. PACKAGE AND FREEZE SHELL. FREEZE REMAINING SAUCE. WHEN READY TO EAT, DEFROST PIZZA SHELL AND SAUCE - CONTINUE AS ABOVE.
