MARVELLOUS MUSSELS
List of Ingredients
- 3 STALKS CELERY
- 1/2 RED PEPPER (CHOPPED
- 1/2 GREEN PEPPER CHOPPED
- 1/2 MEDIUM ONION CHOPPED
- 2 CUPS CLAMATO JUICE
- 2 DOZEN MUSSELS
- 2 TBSP. EXTRA VIRGIN OLIVE OIL
- RED PEPPER FLAKES
- RED WINE (OPTIONAL)
- 1 PACKAGE LINGUINE OR FETTUCINI
- GRATED ROMANO OR PARMESAN CHEESE
Instructions
- CHOP THE RED PEPPER, GREEN PEPPER, CELERY AND ONION INTO SMALL PIECES AND ADD TO OLIVE OIL IN DEEP FRYING PAN.
- SPRINKLE VEGETABLES WITH DESIRED AMOUNT OF HOT PEPPER FLAKES
- ADD 2 CUPS OF EXTRA SPICY CLAMATO JUICE AND APPROX. 1/2 CUP DRY RED WINE
- ALLOW TO SIMMER APPROXIMATELY 1 HOUR ON LOW HEAT. (YOU MAY NEED TO ADD MORE CLAMATO JUICE AS SOME OF THE JUICE WILL EVAPORATE WHILE COOKING)
- PLACE CLEANED MUSSELS IN PAN ON TOP OF VEGETABLES, COVER AND WHEN ALL THE MUSSELS HAVE OPENED, REMOVE FROM PAN
- PREPARE PASTA WHILE MUSSELS ARE COOKING
- PUT PASTA IN INDIVIDUAL BOWLS, POUR SOME SAUCE OVER THE PASTA AND SURROUND THE EDGE OF EACH BOWL WITH APPROXIMATELY ONE DOZEN OF THE MUSSELS.GRA
- SPRINKLE WITH PARMESAN OR ROMANO CHEESE ...... ALSO YOU CAN DIP CALABRESE BREAD INTO THE SAUCE
