STRAWBERRY CHIFFON PIE
1 PINT STRAWBERRIES
3/4 CUP SUGAR
1 TBSP. GELATIN
1/4 CUP COLD WATER
1/4 CUP BOILING WATER
1 TBSP. LEMON JUICE
1/4 TSP. SALT
1/4 CUP WHIPPED CREAM
2 EGG "WHITES", WHIPPED
1 GRAHAM CRACKER PIE CRUST
RESERVE 1/2 CUP STRAWBERRIES.
CRUSH REMAINING STRAWBERRIES AND ADD SUGAR (AS ABOVE). LET STAND 1/2 HOUR. SOFTEN GELATIN IN COLD WATER 5 MINUTES, AND THEN DISSOLVE IN 1/4 CUP BOILING WATER. MIX WITH CRUSHED BERRIES, JUICE AND SALT.
COOL!!!!!
WHEN MIXTURE BEGINS TO THICKEN, FOLD IN EGG WHITES AND WHIPPED CREAM. POUR INTO PIE SHELL. SHILL TILL SET (FIRM). GARNISH WITH WHOLE STRAWBERRIES.
