2 TBSP. COOKING OIL
1MEDIUM ONION
4 TO 5 GARLIC BUDS
2 TO 3 TBSP. CURRY POWDER
1-1/2 TO 2 TBSP SALT
FRY ONE (1) MED ONION AND 4 GARLIC BUDS (SLICED) INTO 2 TBSP. OIL
ADD CURRY POWDER AND SIMMER WITH A SMALL AMOUNT OF WATER FOR APPOX. 5 MINUTES OR UNTIL DRIED.
WHEN DRIED, ADD CHICKEN AND SALT. TURN UP HEAT SO THAT CURRY SPREADS ONTO CHICKEN.
COVER AND LET SIMMER FOR APPROX. 20 MINUTES.
WHILE THERE IS STILL SOME LIQUID IN THE PAN, TURN UP HEAT SO THAT CURRY BLENDS INTO EVERYTHING. WHEN CURRY STARTS TO THICKEN, TURN OFF AND SERVE OVER PLAIN STEAMED RICE.
