PARMESAN POTATO WEDGES
2 tsp. butter or margarine
2 tsp. vegetable oil
1/4 cup grated parmesan cheese
2 medium baking potatoes
MICROWAVE BUTTER AT HIGH FOR 20-30 SECONDS UNTIL MELTED. REMOVE FROM MICROWAVE, ADD OIL AND SET ASIDE.
SCRUB POTATOES, CUT IN HALF LENGTHWISE THEN CUT EACH HALF INTO 3 OR 4 WEDGES. BRUSH CUT SLICES OF POTATES WITH BUTTER MIXTURE. ROLL IN CHEESE MIXTURE AND PLACE WEDGES, CUT SIDE UP, IN SINGLE LAYER ON LARGE MICROWAVEABLE PLATE.
MICROWAVE ON HIGH, COVERED, 8-10 MINUTES, TURNING AND RE-ARRANGING WEDGES TWICE DURING COOKING TIME. LET STAND 5 MINUTES. SEASON WITH SALT AND PEPPER.
