    Mango Cake

    1 1/2 cup sugar (375 ml)
    3 eggs
    1 cup (250ml) butter
    1/2 Tsp (2 ml) salt
    1/2 cup (250 ml) milk
    1 tbs (15 ml) baking Soda
    1 tsp (5 ml) cinnamon
    2 cups (500 ml) chopped ripe mango
    1 cup (250 ml) Chopped walnuts (optional)
    2 cups (500 ml) self raising flour

    Butter and flour a 9" by 13 " (approx. 25 by 30 cm) pan. Beat sugar and butter with electric mixer until smooth. Add eggs, beating until thoroughly mixed. Now add the milk, salt, baking soda, cinamon, flour and mix until smooth. Nest add the mangoes and the nuts and stir to combine. Pour into baking dish and bake 1 hour in a preheated oven 325 degrees (160C). Toothpick should come out clean.
