Perogie Casserole
Serves 8
15 lasagna noodles
2 C cottage cheese
1 egg
1/4 t. onion salt
2 cups mashed potatoes
1 C shredded cheddar cheese
1/4 t. onion salt
1/4 t. salt
1/8 t. pepper
1 C butter or margarine
1 C chopped onions
sour cream
Cook noodles. Line bottom of 9x13 pan. (I sprayed the pan first and I
used 12 noodles - 3 layers, 4 across.) Mix cottage cheese (I used non-fat
ricotta) and egg and onion salt. I used regular salt. Spread over the
layer of noodles. Top with another layer of noodles. Mix potatoes (I used
instant, and more than 2 cups), cheddar cheese (I also used a little more)
and the salt and pepper. Spread over the 2nd layer of noodles. Top with
another layer of noodles. Sauté butter and onions. Pour over top layer and
bake at 350* for 30 minutes. Let stand for 10 minutes before cutting.
Serve with sour cream.
