Lovers' Knots
1 1/2 cups All-purpose Flour
1/2 tsp. Baking Powder
Pinch of Salt
2 Tbs. Confectioner's Sugar
1 large Egg, beaten
2 Tbs. Rum
Vegetable oil for deep frying
Confectioner's Sugar for dusting
Sift together the flour, baking powder, and salt into a
large mixing bowl.
Stir in the confectioner's sugar and add the egg. Blend
the dough with a fork until a consistent mixture is
formed. Add the rum gradually while continuing to
blend the dough.
Knead the dough on a lightly floured surface until
smooth. Divide the dough into four equal portions.
Roll each portion of dough out to form a 6-inch by 3-inch
rectangle. Cut each dough rectangle into six strips, each
about 1/2-inch wide. Tie the strips into a single knot.
In a deep-fat fryer or heavy skillet, warm the oil to 375-F
degrees.
Deep-fry the dough knots in small batches for about one
or two minutes each, until crisp and golden. Transfer the
fried dough to paper towels to drain.
