Walnut Cookies
Makes 36-40
Ingredients:
1 3/4 cups All-purpose Flour
3/4 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 cup Butter, softened
1/2 cup Vegetable Shortening
2/3 cup Granulated Sugar
1/2 cup Brown Sugar, firmly packed
1 whole Egg, lightly beaten
1 tsp. Vanilla Extract
1/4 cup Walnuts, finely chopped
About 36-40 Walnut halves
In a medium bowl, sift together the flour, baking powder,
and baking soda.
In a large mixing bowl, cream together the butter, shortening,
and white and brown sugars until fluffy.
Add the egg and vanilla and blend until thoroughly creamed.
The mixture should be a lemony-yellow color with a smooth
consistency. Stir in the chopped walnuts.
Shape the cookie dough into a ball, cover with plastic wrap,
and refrigerate for at least one hour or up to 2 days.
Pre-heat the oven to 350-F degrees and prepare a cookie sheet
for baking.
Divide the cookie dough into four equal pieces and then
divide each piece into about 10 portions. Roll each portion
into a ball, and place the balls of cookie dough 2 to 3 inches
apart on a baking sheet. Press a walnut half firmly into the
center of each ball.
Bake until golden brown, usually about 14 to 16 minutes.
Let cool on baking sheets for 5 minutes, then transfer to a
rack to cool completely. Store in an airtight container.
