Carrot Potato Boats

This is something my grandchildren really like.Looks pretty.





List of Ingredients



• 4 Baking potatoes
  
• 4 oz Neufchatel cheese (cut into chunks and softened)
  
• 3-4 tbsp. milk
  
• 1/4 tsp salt
  
• dash pepper
  
• 1 cup cooked carrots pureed
  
• 2 tbls. chopped green onion
  






Instructions



1. Bake potatoes in 375 degree oven 45 minutes or till done
   
2. cool slightly,cut in half and hollow out centers into small mixing bowl. reserving shells.
   
3. Add Neufchatel cheese,milk,salt and pepper. Beat until fluffy adding more milk if necessary.
   
4. Fold in carrots and green onions.
   
5. Pipe or spoon mixture into potato shells.
   
6. Bake on baking sheet 375 degree oven. 12 or 15 min. or until heated thru. If desired can sprinkle with chives or parsley before serving.
