List of Ingredients
- 14 (1-inch-diameter) cherry tomatoes
- 3/8 tsp salt
- 1/4 pound lean bacon (4 slices)
- 2 Tbsp thinly sliced scallions
- 1/4 cup finely chopped romaine or iceberg lettuce
- 2 Tbsp mayonnaise
- 1/8 tsp freshly ground black pepper
Instructions
- Cut a 1/8-inch-thick slice from bottom of each tomato with a serrated knife, so tomatoes will stand upright. Cut a 1/8-inch-thick slice from stem ends and gently scoop out pulp and seeds with melon ball cutter or a small spoon; discard. Sprinkle tomato shells with 1/4 teaspoon salt and invert on paper towels to drain for 15 minutes.
- Meanwhile, cook bacon in a 12-inch skillet over moderate heat until crisp, about 10 minutes. Transfer to paper towels to drain and cool, then finely crumble.
- Stir together bacon, scallions, lettuce, mayonnaise, remaining 1/8 teaspoon salt, and pepper in a small bowl until well combined. Divide mixture evenly among tomato shells and arrange in a serving dish.
Makes 14 hors d'oeuvres.
