    Bacon-Stuffed Tomatoes

    From "Half-Baked Gourmet Party Food"


    List of Ingredients


    • 1 lb. fresh cherry tomatoes
    • 10 slices pre-cooked bacon, chopped
    • 2 green onions, finely chopped
    • 1/4 cup mayonnaise


    Instructions


    1. Cut each tomato in half. Scoop out and discard seeds and pulp.

    2. In a small bowl, combine the bacon, onions and mayonnaise; stir until well mixed.

    3. Spoon the bacon mixture evenly into the tomato shells. (Can be made ahead, covered and refrigerated up to 2 hours. Bring to room temperature before serving.)

      Makes 36 to 48.
