â—¦ ½ pound firm feta
â—¦ 3 teaspoons extra-virgin olive oil
â—¦ Crushed red chile flakes
â—¦ Crusty bread, for serving
Recipe
Heat oven to 400° F.
Cut feta into four slices about 3 x 4 and ½-inch thick.
Place each slice on a large piece of aluminum foil, drizzle with 1 teaspoon oil, and sprinkle with chile flakes. Wrap foil around cheese, closing it and folding it over to seal.
Place foil packets on a baking sheet and bake until cheese is slightly soft, about 10 minutes. Transfer to four plates, remove foil, and drizzle with remaining 2 teaspoons oil.
Serve with bread.
Serves 4
• Cook's Note:
Use tinned feta rather than the barrel-aged variety, which can be too soft and creamy for this dish.
