Recipe Introduction
"These are the potato chips of the shrimp world: crispy fried shrimp tossed with a chili mayonnaise. I dare you to eat just one."
List of Ingredients
â—¦ Canola oil
â—¦ 1 cup cornstarch
â—¦ 1 cup rice flour
â—¦ 2 ½ cups soda water
â—¦ ½ pound medium wild American shrimp, peeled and deveined
â—¦ Salt
â—¦ 2 tablespoons sambal chili paste
â—¦ ½ cup mayonnaise
Recipe
Heat 3 inches of oil in a small saucepan to 350° F.
In a mixing bowl, combine the cornstarch, rice flour, and soda water. Dip the shrimp into the batter and drip off excess.
Fry the shrimp until crispy.
Drain on paper towels and salt well.
In a large bowl, whisk together the chili paste and mayonnaise.
Add the hot fried shrimp, toss, and serve.
