Blue Cheese-Bacon Dip

"Many people aren't huge fans of blue cheese. My friend Cordilla's husband Charlie cannot stand it. I served this dip at a Christmas party a few years ago, and I saw him holding court around this dip as he scooped cracker after cracker in it. After he had eaten his weight in it, I confessed to him that his new favorite dip was made of mountains of blue cheese. He didn't believe me, and to this day he still thinks I was joking. By the way, adding a little crumbled bacon on top won't hurt anyone's feelings."

â—¦ 7 bacon slices, chopped
â—¦ 2 cloves garlic, minced
â—¦ 2 (8-ounce) packages cream cheese, softened
â—¦ â…“ cup half-and-half
â—¦ 4 ounces crumbled blue cheese (about 1 cup)
â—¦ 2 tablespoons chopped fresh chives
â—¦ 3 tablespoons chopped walnuts, toasted
â—¦ Grapes
â—¦ Flatbread or assorted crackers
Recipe
Preheat the oven to 350° F. Cook the bacon in a skillet over medium-high 10 minutes or until crisp. Remove the bacon from the skillet with a slotted spoon to drain on paper towels, reserving the drippings in the skillet. Add the garlic to the drippings in the skillet, and sauté 1 minute.
Beat the cream cheese with an electric mixer at medium speed until smooth. Add the half-and-half, beating until combined. Stir in the bacon, garlic, blue cheese, and chives. Spoon the mixture evenly into 4 (1-cup) individual baking dishes.
Bake in the preheated oven for 15 minutes or until golden and bubbly. Sprinkle evenly with the chopped walnuts. Serve with grapes, flatbread, or assorted crackers.
