    Blue Cheese Dip with Caramelized Shallots

    List of Ingredients


    • 2 Tbsp olive oil
    • 10 shallots, thinly sliced (about 2 cups)
    • 2 cups crumbled creamy mild blue cheese (about 5 ounces)
    • 1 cup sour cream
    • 4 Tbsp chopped chives, divided

    • Toasted French-bread baguette slices
    • Assorted crudités


    Instructions


    1. Heat oil in a heavy medium skillet over medium heat. Add shallots and sauté until deep golden brown, stirring occasionally, about 20 minutes. Cool.

    2. Blend blue cheese and sour cream in processor until smooth. Season to taste with salt and pepper. Transfer mixture to medium bowl. Mix in shallots and 2 tablespoons chives. Cover and refrigerate at least 2 hours.

      Makes 8 to 10 servings.



    Final Comments


    Can be made 1 day ahead. Keep refrigerated.
