Blue Cheese Dip with Caramelized Shallots

- 2 Tbsp olive oil
- 10 shallots, thinly sliced (about 2 cups)
- 2 cups crumbled creamy mild blue cheese (about 5 ounces)
- 1 cup sour cream
- 4 Tbsp chopped chives, divided

- Toasted French-bread baguette slices
- Assorted crudités
Instructions
- Heat oil in a heavy medium skillet over medium heat. Add shallots and sauté until deep golden brown, stirring occasionally, about 20 minutes. Cool.
- Blend blue cheese and sour cream in processor until smooth. Season to taste with salt and pepper. Transfer mixture to medium bowl. Mix in shallots and 2 tablespoons chives. Cover and refrigerate at least 2 hours.
Makes 8 to 10 servings.
Final Comments
Can be made 1 day ahead. Keep refrigerated.
