    Blue Cheese Wheel with Basil & Walnuts

    List of Ingredients


    • 1 cup basil leaves
    • 1/2 cup walnuts
    • 8 ounces blue cheese, divided
    • 8 ounces cream cheese, divided
    • 3 Tbsp dry sherry
    • .
    • Assorted crackers


    Instructions


    1. Put the basil leaves and walnuts into the bowl of a food processor; chop finely. Add 2 tablespoons of the blue cheese and 1 tablespoon of the cream cheese and blend until smooth. Remove the mixture from the food processor and set aside.

    2. Put the remaining blue cheese, cream cheese and sherry into the food processor and blend until smooth.

    3. Line a 3-cup glass bowl with plastic wrap. Layer half of the cheese mixture in the bowl; add the basil mixture, smoothing out the layers; top with the second half of the cheese mixture and cover with plastic wrap. Chill.

      One-half hour before serving, unmold the cheese onto a serving platter. Surround with the crackers and serve.

      Yield: 3 cups
