Blue Cheese Wheel with Basil & Walnuts

- 1 cup basil leaves
- 1/2 cup walnuts
- 8 ounces blue cheese, divided
- 8 ounces cream cheese, divided
- 3 Tbsp dry sherry

Instructions
- Put the basil leaves and walnuts into the bowl of a food processor; chop finely. Add 2 tablespoons of the blue cheese and 1 tablespoon of the cream cheese and blend until smooth. Remove the mixture from the food processor and set aside.
- Put the remaining blue cheese, cream cheese and sherry into the food processor and blend until smooth.
- Line a 3-cup glass bowl with plastic wrap. Layer half of the cheese mixture in the bowl; add the basil mixture, smoothing out the layers; top with the second half of the cheese mixture and cover with plastic wrap. Chill.
One-half hour before serving, unmold the cheese onto a serving platter. Surround with the crackers and serve.
