    List of Ingredients


    • -- Salsa --
    • 1 Tbsp diced green onions
    • 3 Tbsp diced fresh cilantro
    • 1 whole green bell pepper, diced
    • 1 whole red pepper, diced
    • 1 whole yellow pepper, diced
    • 1 Tbsp minced garlic
    • 2 Tbsp red pepper
    • 3/4 cup diced onions
    • 1 Tbsp lemon juice
    • Juice of 4 fresh limes
    • .
    • 32 (21/25 count) fresh shrimp, peeled
    • Seafood boil
    • 1 fresh lime, cut into wedges
    • Tortilla chips


    Instructions


    1. In a medium bowl, combine all of the salsa ingredients, mixing together for approximately 2 minutes to make a salsa.

    2. In a medium pot, put shrimp into boiling water with seafood boil of your choice, and cook until done. Remove from water and allow to drain. Chill shrimp.

    3. To serve: lay a bed of salsa in a deep cocktail glass. Pile shrimp in glass on top of salsa. Garnish with lime wedges, tortilla chips and remaining salsa.

      Makes 4 servings.
