    Bubba Gump's Beer-Batter Shrimp

    From "The Bubba Gump Shrimp Co. Cookbook"


    List of Ingredients


    • 1 lb. unpeeled large fresh shrimp
    • 1/4 cup all-purpose flour
    • 1/4 cup cornstarch
    • 1/8 tsp salt
    • 1/4 cup beer
    • 2 Tbsp butter or margarine, melted
    • 1 egg yolk
    • Vegetable oil


    Instructions


    1. Peel shrimp, leaving tails intact; devein, if desired.

    2. Combine flour, cornstarch and salt. Add beer, butter and egg yolk; stir until smooth.

    3. Pour oil to a depth of 2 inches into a Dutch oven; heat to 375º F. Dip shrimp into batter; fry a few at a time, until golden. Drain on paper towels.

      Makes 4 servings.
