    Bubba Gump's Shrimp Cocktail

    From "The Bubba Gump Shrimp Co. Cookbook"


    List of Ingredients


    • 6 cups water
    • 2 Tbsp salt
    • 2 bay leaves
    • 1 lemon, halved
    • 1 stalk celery, cut into 3-inch pieces
    • 2 lbs. unpeeled medium-size fresh shrimp
    • 4 cups shredded lettuce (optional)
    • Bubba's Cocktail Sauce (recipe follows)


    Instructions


    1. Combine first 5 ingredients in a Dutch oven. Bring to a boil; add shrimp, and cook 3 to 5 minutes or until shrimp turn pink.

    2. Drain well; rinse with cold water. Chill.

    3. Peel and devein shrimp. Arrange lettuce on individual serving plates, if desired. Top with shrimp. Serve with Bubba's Cocktail Sauce. Garnish with lemon wedges, if desired.

      Makes 8 to 10 appetizer servings.

      BUBBA'S COCKTAIL SAUCE

      1 cup chili sauce
      1/3 cup lemon juice
      3 Tbsp prepared horseradish
      1 Tbsp Worcestershire sauce
      1/4 tsp hot sauce

      Combine all ingredients; cover and chill. (Yield: 1-1/2 cups)
