Buttermilk Biscuit Bites

"These tasty little biscuits are wonderful filled with almost anything - honey-baked ham and sweet butter, smoked turkey and chutney, or chicken salad. An elegant French Sancerre or Pinot Blanc is the thing to drink with these."
List of Ingredients
• 2 cups unbleached all-purpose flour
• 1 Tbsp baking powder
• 1 tsp baking soda
• 1 tsp kosher salt
• 5 Tbsp chilled unsalted butter, cut into pieces
• ¾ cup plus 2 Tbsp buttermilk
• Thinly sliced ham, smoked turkey, or chicken salad for serving
Recipe
Preheat the oven to 450°F.
In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Sprinkle the butter pieces over the flour mixture and, using a pastry blender or your fingertips, cut it into the mixture until it resembles coarse meal.
Add the buttermilk and gently stir until the mixture forms a rough mass. Using your hands, gather the dough into a ball.
Transfer the dough to a lightly floured work surface and knead for about 1 minute. Pat or roll the dough out to form a rectangle about ¾-inch thick. Using a biscuit cutter dusted with flour, cut the dough into 1-inch rounds. Gather up the dough scraps and repeat to make more biscuits.
Arrange the biscuits about 1 inch apart on an ungreased baking sheet and bake until golden brown, 7 to 9 minutes. Remove from the oven and transfer to a wire rack to cool. Split the biscuits crosswise in half. Add the desired fillings and serve at once.
Makes 20 small biscuits.
