    Camembert Almond Balls [Gigi's]

    List of Ingredients


    • 8 ounces Camembert
    • 1 cup dry white wine
    • 1/2 cup unsalted butter, softened
    • 1 cup salted almonds, ground


    Instructions


    1. Place whole Camembert in a bowl, pour the wine over it and let it stand at room temperature overnight. (Turn the cheese once or twice.)

    2. Drain the cheese and discard the liquid.

    3. Press the cheese through a coarse sieve and blend in with the softened butter. Chill for at least 2 hours.

    4. Shape the cheese into about 24 small balls and roll the balls in the ground almonds.

      Serve at once with assorted crackers.

      Makes 24.
