Camembert Almond Balls [Gigi's]

- 8 ounces Camembert
- 1 cup dry white wine
- 1/2 cup unsalted butter, softened
- 1 cup salted almonds, ground
Instructions
- Place whole Camembert in a bowl, pour the wine over it and let it stand at room temperature overnight. (Turn the cheese once or twice.)
- Drain the cheese and discard the liquid.
- Press the cheese through a coarse sieve and blend in with the softened butter. Chill for at least 2 hours.
- Shape the cheese into about 24 small balls and roll the balls in the ground almonds.
Serve at once with assorted crackers.
Makes 24.
