    Casa Dragones Guacamole

    Recipe Introduction

    "This guacamole, sourced from the Casa Dragones tequila-making operation in San Miguel de Allende, Mexico, offers a hit of flavor thanks to a rough paste made from white onion, cilantro, serrano chiles, and garlic, into which chunks of ripe avocado are gently incorporated."

    List of Ingredients

    ◦  ¼ cup finely chopped white onion
    ◦  2 Tbsp minced fresh cilantro
    ◦  4 serrano chiles, stemmed, seeded, and finely chopped
    ◦  2 cloves garlic, minced
    ◦  Kosher salt, to taste
    ◦  3 avocados, pitted, peeled, and cut into 1-inch chunks
    ◦  1 plum tomato, seeded and finely chopped
    ◦  Juice of 1 lime
    ◦  Tortilla chips, for serving

    Recipe

    In a large bowl or molcajete, combine onion, cilantro, chiles, and garlic; sprinkle heavily with salt and mash with a fork or pestle into a chunky paste.

    Add avocados, tomato, and lime juice and stir to combine, mashing some of the avocado slightly as you stir. Season with salt and serve with tortilla chips.


    Makes about 4 cups
