    Cheddar-Sherry Spread

    List of Ingredients


    • 8 ounces mild Cheddar cheese, at room temperature, grated
    • 6 Tbsp unsalted butter, at room temperature
    • 2 Tbsp dry sherry
    • 2 tsp Dijon mustard
    • 1/4 tsp ground white pepper
    • 1/8 tsp cayenne pepper
    • 2 Tbsp chopped parsley leaves
    • 2 Tbsp minced chives


    Instructions


    1. Combine the cheese, butter, sherry, mustard, white pepper, cayenne, parsley and chives in a food processor. Process, stopping to scrape down the sides of the bowl as needed, until the mixture is smooth. At this point, the cheese spread can be wrapped tightly and stored in the refrigerator for 1 week.

      Makes about 1-1/2 cups.
