Cheese Tartlets

List of Ingredients
- 2 tsp butter or margarine
- 3 Tbsp minced onion
- 1/2 tsp minced garlic
- 12 large fresh basil leaves
- 1 (5.5-ounce) log goat cheese, at room temperature
- 1/3 cup freshly grated Parmesan cheese
- 1 large egg, lightly beaten
- 2 Tbsp heavy or whipping cream
- 1/4 tsp salt
- 1/8 tsp freshly ground pepper
- 2 pkgs. (2- or 2.1 ounces each) frozen mini phyllo pastry shells *
Instructions
- Melt butter in small nonstick skillet over medium heat. Add onion; cook 1 minute. Add garlic and cook 1 minute more, just until golden.
- Heat oven to 350 degrees (F).
- Drop basil leaves into a small saucepan with boiling water; immediately remove with a slotted spoon. Pat dry with paper towel; finely chop.
- Process goat cheese, Parmesan, egg, cream, salt and pepper in a food processor until smooth. Transfer to a bowl; stir in onion mixture and basil.
- Arrange phyllo shells on a large cookie sheet. Fill each with a scant tablespoon of the cheese filling. Bake 10 to 12 minutes, until puffed. Serve warm or at room temperature.
Makes 30 tartlets.
Final Comments
* Frozen mini phyllo pastry shells can be found in the freezer section of supermarkets.
* These appetizers can be made ahead. Store tartlets in an airtight container and refrigerate overnight. Bring to room temperature. Reheat in 350-degree oven for 12 minutes.
