    Cheesy Spinach & Artichoke Bread Dip Skillet

    "When your rolls are part of your bowl, you know you're in for a good time. Frozen dinner rolls frame a warm, melty filling that bubbles and browns as the rolls back up golden and toasty. Make sure to squeeze as much liquid as you can from the spinach, and go for plain old water-packed artichoke hearts versus marinated—you'll find them in the canned vegetable aisle."

    List of Ingredients

    â—¦ Olive oil
    â—¦ 12 unbaked frozen dinner roll balls (1 ½ pounds)
    â—¦ ½ cup grated Parmesan cheese (3 ounces), plus more as desired
    â—¦ ½ cup grated pecorino cheese (3 ounces)
    â—¦ ½ cup shredded low-moisture mozzarella cheese (2 ounces)
    â—¦ ¼ cup sour cream
    â—¦ 1 teaspoon dried basil
    â—¦ ½ teaspoon crushed red pepper flakes
    â—¦ 1 (14-ounce) can artichoke hearts, drained and coarsely chopped
    â—¦ 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry (about ¾ cup)
    â—¦ 1 (8-ounce) package cream cheese, at room temperature
    â—¦ 2 cloves garlic, finely chopped

    Recipe

    Preheat the oven to 375° F.

    Coat a 10-inch cast iron skillet with olive oil. Arrange the dinner roll dough balls in a ring around the outer edge of the skillet. Cover with a kitchen towel or plastic wrap and let stand at room temperature until thawed, about 30 minutes.

    Combine the Parmesan, pecorino, mozzarella, sour cream, basil, red pepper flakes, artichoke hearts, spinach, cream cheese, and garlic in a medium bowl and mix to incorporate evenly.

    Once the dough has thawed, uncover it. Transfer the spinach-cheese mixture to the middle of the skillet, mounding it in the center. Brush the rolls with more olive oil and top with an additional sprinkle of Parmesan, if you like.

    Bake until the rolls are puffed and lightly golden brown and the cheese dip is melted and golden brown on top, 25 to 35 minutes. Transfer the skillet to a wire rack and let cool slightly before serving.

    Serves 6
