"Tiny, yes, but big on personality: In this playful spin on the BLT, all the makings of the sandwich (minus the bread) are combined in a single bite. Colorful cherry tomatoes are topped with a dollop of mayonnaise, lettuce tendrils, and tiny bits of bacon."
List of Ingredients
â—¦ 48 cherry tomatoes (about 1 quart)
â—¦ â…“ cup mayonnaise
â—¦ 6 slices bacon, cooked until crisp, drained, and finely chopped
â—¦ Coarse salt and freshly ground pepper
â—¦ 1 cup very finely shredded iceberg lettuce
Recipe
Trim bottom of tomatoes flat so they stand upright. Use a serrated knife to slice off top ¼ inch. Scoop out seeds and pulp and place tomato shells, upside down, on a paper towel-lined baking sheet to drain.
Place mayonnaise in a small resealable plastic bag, and snip one corner. Flip tomatoes upright, and squeeze a pea-size dollop of mayonnaise into bottom of each. Sprinkle half of bacon evenly among tomatoes, then season with salt and pepper. Stuff tomatoes with lettuce, sprinkle with remaining bacon, and dab with more mayonnaise. Serve immediately or refrigerate in an airtight container up to 3 hours.
