Chicken Wings with Spicy Mayo Marinade

◦ 5 pounds chicken wings
◦ 1 cup mayonnaise
◦ cup honey
◦ cup plus 2 tablespoons hot sauce
◦ 1 tablespoon lime zest
◦ 2 tablespoons fresh lime juice
◦ 1 tablespoon kosher salt
◦ 2 teaspoons ground black pepper
◦ cup unsalted butter
◦ 2 tablespoons apple cider vinegar
◦ 2 cloves garlic, grated
Recipe
Cut off and discard wing tips; cut wings in half at joint, if desired. Place in a large resealable plastic bag. In a small bowl, combine mayonnaise, honey, 2 tablespoons hot sauce, lime zest and juice, salt, and pepper. Pour over wings in bag, tossing to coat. Seal bag and refrigerate for at least 4 hours or up to overnight.
Preheat oven to 400 F. Line a large rimmed baking sheet with foil; place wire rack on foil. Remove wings, discarding marinade, and place in a single layer on prepared pan. Bake until golden brown, 45 to 50 minutes, turning every 10 minutes to prevent burning.
In a medium Dutch oven, heat butter, vinegar, garlic, and remaining cup hot sauce over medium heat, stirring to combine. Drizzle half of butter mixture over wings. Serve immediately with remaining butter mixture.
Makes 4 to 6 servings

You can also toss the wings in the entire batch of butter sauce and serve.
