    Cream Cheese Roll-Ups (aka Redneck Sushi)

    Recipe Introduction

    "I tried octopus once, on a dare from one of our daughters, but I'll admit this Southern girl isn't much into sushi. Mama always said it was rude to make a face, and instead to just say 'No, thank you' if I didn't like something. Uh...no, thank you. Those little rolls always look so cute on the plate, though, so I came up with my own version. I call it redneck sushi. Roll it up, cut it up just like sushi, and snack right alongside your supercool friends who are eating raw octopus. I draw the line at tentacles!"

    List of Ingredients

    ◦ 1 pound bacon
    ◦ 2 (8-ounce) packages cream cheese, softened
    ◦ cup picante sauce (hot)
    ◦ 4 green onions, finely sliced
    ◦ 4 large flour tortillas
    ◦ 16 slices thin deli ham

    Recipe

    In a large skillet over medium heat, use kitchen shears to cut the bacon into small pieces, then cook until crisp, drain on a paper towel-lined plate, and set aside.

    In a medium mixing bowl, using a hand mixer, combine the cream cheese, picante sauce, and green onions. Divide evenly and spread among the tortillas, leaving a -inch border all around. Top each tortilla with 4 slices of ham and bacon pieces. Roll each tortilla into a cylinder, wrap each in plastic wrap, and refrigerate for 1 hour.

    Remove the rolls from the fridge and discard the plastic wrap. Cut each roll into 1-inch pieces, discarding the uneven ends (or taste them while preparing, as I do!). If you like, for easy serving, stick toothpicks in the roll 1 inch apart before cutting.

    Makes 4 rolls,
    8 pieces each



    ❧ Tip:
    You can make these roll-ups the night before, chill overnight, and slice and serve the next day.
