    Deep-Fried Cheese Ravioli

    From "Finger Food: Bite-Sized Snacks to Share with Friends"


    List of Ingredients


    • Vegetable oil for deep-frying
    • 10 ounces fresh cheese ravioli


    Instructions


    1. Fill a deep, heavy-bottomed pan or deep fryer one-third full of oil and heat to 350° F, or until a cube of bread dropped into oil browns in 15 seconds. Cook ravioli in batches until golden brown.

    2. Remove from oil and drain on crumpled paper towels. Sprinkle with salt and cracked black pepper and serve hot.

      Makes about 30 ravioli.

      These little snacks go well with all kinds of dips, from ranch dressing to hummus to marinara, or they're just fine all on their own. "Finger Food" suggests pairing them with:

      GREEN MEXICAN SALSA

      • 1 (10-ounce) can tomatillos, drained
      • 1 small onion, chopped
      • 1 jalapeño, chopped
      • 3 cloves garlic, crushed
      • 2 Tbsp chopped cilantro leaves
      • 1 to 2 tsp lime juice

      Place tomatillos in food processor with onion, jalapeño, garlic and 1 tablespoon cilantro. Process until smooth, then blend in lime juice to taste. Add remaining cilantro and process just long enough to mix evenly into dip.

      Makes 2 cups.
