Deep-Fried Mushrooms

List of Ingredients
â—¦ 32 fresh, white mushrooms
â—¦ Flour for dredging
â—¦ Salt and freshly ground pepper
â—¦ 2 eggs
â—¦ 1 teaspoon water
â—¦ 1 teaspoon peanut oil
â—¦ 1 ½ cups fresh bread crumbs
â—¦ Oil for deep frying
â—¦ Tartar sauce
Recipe
Trim off tips of mushroom stems, but leave the stems on. Rinse mushrooms under cold running water. Drain but do not dry.
Dredge mushrooms in flour seasoned with salt and pepper. Beat the eggs with water and oil and place in a pie plate. Toss or turn the mushrooms in the egg mixture until completely coated, then coat with bread crumbs. Let stand until ready to cook.
Heat the oil in a large skillet to 375 degrees. If a deep-fat thermometer is not available, drop a 1-inch cube of white bread into the fat. If the bread browns in 45 seconds, the temperature is correct. Deep fry the mushrooms until golden brown. Drain on absorbent paper toweling and serve hot with tartar sauce.
