List of Ingredients
- 3 (14-ounce) cans black-eyed peas, drained and rinsed
- 2 cups prepared chow-chow
- ½ cup fresh corn kernels
- ½ cup chopped green onion
- 1 Tbsp distilled white vinegar
- 1 tsp salt, or to taste
- 3 cloves garlic, minced
- ¼ tsp ground red pepper
- ½ cup cooked and crumbled bacon
- .
- Salt-and-vinegar potato chips
Instructions
- In a medium bowl, combine peas, chow-chow, corn, green onion, vinegar, salt, garlic, and red pepper. Cover and refrigerate for at least 2 hours.
Just before serving, stir in bacon. Serve with chips.
Makes approximately 6½ cups.
