    • 3 (14-ounce) cans black-eyed peas, drained and rinsed
    • 2 cups prepared chow-chow
    • ½ cup fresh corn kernels
    • ½ cup chopped green onion
    • 1 Tbsp distilled white vinegar
    • 1 tsp salt, or to taste
    • 3 cloves garlic, minced
    • ¼ tsp ground red pepper
    • ½ cup cooked and crumbled bacon
    • .
    • Salt-and-vinegar potato chips


    Instructions


    1. In a medium bowl, combine peas, chow-chow, corn, green onion, vinegar, salt, garlic, and red pepper. Cover and refrigerate for at least 2 hours.

      Just before serving, stir in bacon. Serve with chips.

      Makes approximately 6½ cups.
