    Deviled Eggs with Capers

    From "The All New Ultimate Southern Living Cookbook"

    List of Ingredients


    • 6 large eggs, hard-cooked and peeled
    • 2 tablespoons mayonnaise
    • 1 tablespoon butter, softened
    • 2 teaspoons drained capers
    • 1 teaspoon chopped fresh chives or parsley
    • ⅛ teaspoon dry mustard
    • ⅛ teaspoon pepper
    • Paprika (optional)
    • Fresh chives or parsley sprigs (optional)


    Instructions


    1. Cut eggs in half lengthwise; carefully remove yolks. Mash yolks; stir in mayonnaise and next five ingredients.

    2. Spoon or pipe egg yolk mixture evenly into egg white halves. Cover and chill at least 1 hour or until ready to serve.

    3. Sprinkle with paprika and top with chives or parsley sprigs, if desired.

      Makes 6 servings
