Guacamole with Lots of Lime

List of Ingredients
- 3 ripe avocados, halved, pitted and peeled
- Finely grated zest from 2 limes
- 2 Tbsp freshly squeezed lime juice
- 6 scallions (white part only), finely chopped
- 1 small clove garlic, finely minced
- 2 Tbsp minced jalapeno chili pepper, or to taste
- 1/4 cup finely chopped cilantro, or to taste
- Salt to taste
Instructions
- Coarsely chop the avocado. Place it in a large bowl and add the lime zest, lime juice, scallions, garlic and jalapeno. Using a fork or a wooden spoon, mash it to the desired consistency. Add cilantro and salt to taste and mix gently. Serve immediately.
Makes about 3 cups.
