    Double Cheese Tartlets

    From "2010 Christmas with Southern Living"

    List of Ingredients


    • 2 (1.9-ounce) packages frozen mini-phyllo pastry shells
    • Parchment paper
    • ¼ cup crumbled blue cheese
    • ¼ cup whipping cream
    • 2 tsp brandy (optional)
    • 2 large eggs
    • ½ cup (2 ounces) finely shredded Gouda cheese


    Instructions


    1. Preheat oven to 425° F. Place pastry shells on a large baking sheet lined with parchment paper.

    2. Mash blue cheese and cream with a fork in a bowl until almost smooth. Stir in brandy, if desired, until smooth; stir in eggs until well blended. Stir in cheese.

    3. Spoon cheese mixture into tart shells. Bake at 425° for 18 minutes, or until filling is set.

      Makes 30 tarts.
