Double Cheese Tartlets

List of Ingredients
- 2 (1.9-ounce) packages frozen mini-phyllo pastry shells
- Parchment paper
- ¼ cup crumbled blue cheese
- ¼ cup whipping cream
- 2 tsp brandy (optional)
- 2 large eggs
- ½ cup (2 ounces) finely shredded Gouda cheese
Instructions
- Preheat oven to 425° F. Place pastry shells on a large baking sheet lined with parchment paper.
- Mash blue cheese and cream with a fork in a bowl until almost smooth. Stir in brandy, if desired, until smooth; stir in eggs until well blended. Stir in cheese.
- Spoon cheese mixture into tart shells. Bake at 425° for 18 minutes, or until filling is set.
Makes 30 tarts.
