Prepare to load up on dipping essentials because everything works with this dip, from celery and carrot sticks to pretzels and tortilla chips. What makes this an extra hearty, protein-packed party option is the addition of the four cups of chopped chicken. To save on prep time, we like to buy two rotisserie chickens from the local market. The best part about this lazy-cook’s recipe is that it’s truly a one-pan wonder. After mixing ingredients in a bowl, pour them into that trusty 13x9 casserole dish to cook for less than 30 minutes."

    â—¦ 1 (8-ounce) package cream cheese, softened
    â—¦ 4 ounces sharp Cheddar cheese, shredded (about 1 cup)
    â—¦ 4 ounces pepper Jack cheese, shredded (about 1 cup)
    â—¦ ½ cup refrigerated bottled ranch dressing (such as Marie's)
    â—¦ ½ cup hot sauce (such as Frank's RedHot)
    â—¦ ¾ teaspoon black pepper
    â—¦ ½ teaspoon garlic powder
    â—¦ 4 cups chopped cooked chicken (from two rotisserie chickens)
    â—¦ ½ cup thinly sliced scallions (from 4 scallions), divided
    â—¦ Cooking spray
    â—¦ 3 ounces blue cheese, crumbled (about ¾ cup)
    â—¦ Carrot sticks, celery sticks, pretzel chips, for serving

    Recipe

    Preheat oven to 350° F.

    Stir together cream cheese, Cheddar cheese, pepper Jack cheese, ranch dressing, hot sauce, pepper, and garlic powder in a large bowl until well blended. Gently fold in the chicken and half of the scallions. Transfer to a lightly greased (with cooking spray) 13 x 9-inch baking dish. Smooth top, and sprinkle evenly with blue cheese.

    Bake in preheated oven until center is hot and edges are bubbly, 20 to 25 minutes. Remove from oven, and top with remaining scallions. Serve with carrots, celery, and pretzel chips.
