Fried Cheese Sticks

- 1 (16-ounce) block mozzarella cheese
- ¾ cup oven-toasted bread crumbs
- ¼ cup all-purpose flour
- 1 Tbsp Italian seasoning
- 3 large eggs
- Vegetable oil
Instructions
- Cut cheese into ½-x-½-4-inch sticks.In a shallow dish, combine bread crumbs, flour, and Italian seasoning. In a small bowl, lightly beat eggs.
- Dip cheese sticks into beaten eggs, allowing excess to drain. Coat each cheese stick in bread crumb mixture. Dip coated cheese stick in eggs, allowing excess to drain. Roll in bread crumbs again. Place on a lightly greased baking sheet. Repeat procedure with remaining cheese sticks. Cover and freeze for at least 2 hours or up to 2 days.
- In a large skillet, pour oil to a depth of ½ inch. Heat to 350° over medium heat on stovetop. Fry cheese sticks, five at a time, for 1 minute per side, or until lightly browned. Drain on paper towels, and keep warm. Serve with Easy Pizza Sauce (recipe follows).
Makes 20 cheese sticks.

EASY PIZZA SAUCE
• 1 Tbsp olive oil
• ½ cup minced onion
• 2 cloves garlic, minced
• 1 (28-ounce) can crushed tomatoes
• 1 tsp dried basil
• 1 tsp dried oregano
• ½ tsp ground black pepper
In a large skillet, heat olive oil over medium heat on stovetop. Add onion and garlic; cook for 2 minutes. Stir in remaining ingredients. Bring to a boil. Reduce heat; simmer uncovered for 10 minutes, stirring often.
Yield: 2 cups
