Fried Cheese with Italian Sauce

- 2 (8-ounce) packages part-skim mozzarella cheese, cut into 1-inch cubes
- 3 large eggs, lightly beaten
- 1/2 cup all-purpose flour
- 3/4 cup Italian-seasoned breadcrumbs
- 1 clove garlic, minced
- 1 tsp vegetable oil
- 1 (28-ounce) can whole tomatoes, undrained and chopped
- 1 tsp dried oregano
- 1/2 tsp sugar
- 1/4 tsp salt
- 1/4 tsp dried basil
- Vegetable oil
Instructions
- Dip cheese in beaten egg. Dredge in flour. Dip coated cheese in beaten egg again; dredge in breadcrumbs, pressing firmly so that crumbs adhere. Place cheese on a wax paper-lined baking sheet, and freeze at least 1 hour.
- Cook garlic in 1 teaspoon oil in a large skillet over medium-high heat, stirring constantly, until tender. Add tomatoes and next 4 ingredients. Bring to a boil, reduce heat and simmer, uncovered, 45 minutes or until thickened, stirring occasionally. Set aside and keep warm.
- Pour oil to a depth of 1-1/2 inches into a Dutch oven; heat to 375° F. Fry cheese until golden. Drain on paper towels. Serve immediately with tomato sauce.
