    Garlicky Cheese Bread

    Recipe Introduction

    "When it comes to garlic bread, my motto is 'go big or go home,' which is why this recipe is not for the calorie faint of heart. All of the delicious players are in attendance: bread, butter, garlic, cheese, and yes, mayonnaise. You may have heard of the sandwich spread working moisture wonders in chocolate cake, but now it's ready for a turn in the savory spotlight. It contributes a touch of tang without overpowering the mix of garlic, chives, and cheeses that make this bread a great stand-alone snack or accompaniment to pasta, soup, or salad."

    List of Ingredients

    â—¦ 1 (1-pound) loaf bread, such as French, Italian, or sourdough
    â—¦ 1 cup mayonnaise
    â—¦ ½ cup (1 stick) unsalted butter, at room temperature
    â—¦ 2 tablespoons chopped fresh chives, plus more for serving
    â—¦ 1 tablespoon minced garlic
    â—¦ ¼ teaspoon black pepper
    â—¦ ½ cup shredded mozzarella cheese
    â—¦ ½ cup freshly grated Parmesan cheese

    Recipe

    Preheat the oven to 350° F. Line a baking sheet with foil or parchment paper. Slice the loaf of bread in half lengthwise.

    In a medium bowl, stir together the mayonnaise, butter, chives, garlic, and pepper. Once the mixture is smooth, stir in the mozzarella cheese and Parmesan cheese. Spread the cheese mixture atop each half of bread, then place the bread on the prepared baking sheet.

    Bake the bread for 7 minutes. Carefully arrange an oven rack about 4 inches from the top of the oven. Switch the oven to broil, then broil the bread for about 3 minutes, until golden brown and slightly crispy. Remove the bread from the oven, top with additional chives, then slice and serve warm.

    Makes 10 to 12 servings
